White truffle in Tuscany is gathered roughly from October to December, around San Miniato and in the Crete Senesi. In summer there is black summer truffle, which is milder than the winter kind and usually gentler in flavour. We arrange an outing with a hunter and a dog, and then a dinner of truffle dishes. Nobody can guarantee a find: it depends on the weather, the moisture and the experience of the dog. We say so in advance, and build the dinner so that it works whatever the morning brings.

We agree with a licensed gatherer and his dog. He shows how the search works and talks about the woods and the soil in a language you understand.
Choosing the area and the season
White truffle is sought around San Miniato and in the Crete Senesi, while the summer black one is found more widely. We choose the place by your dates and the transport from the city.
A truffle dinner
We build a menu where truffle is added fresh, in thin slices: pasta, eggs, cheeses, meat. The dinner takes place in a trattoria, on a farm or at a private villa.
Sourcing fresh truffle
If the morning brings no find, the cook uses truffle from trusted suppliers. We say so openly and do not pass off someone else's find as yours.
Preparing for the walk
We tell you in advance what shoes and clothing to wear: the woods can be damp and muddy. We bring water and a snack for the long walk.
Transport and timing
The outing starts at dawn or in the morning and ends by lunch or dinner. We arrange a driver so you do not look for the road in the woods or worry about parking.

Yes, on a gentle route. We choose short paths and a suitable time of day. If guests find walking hard, we shorten the walk and leave more time for dinner.
